Flaked White wheat is used in some recipes that require its specific attributes; namely, the raw grain flavor and cloudy appearance associated with Belgian white beer. It requires a multiple-temperature mashing regime with temperature rests at 120° F (beta glucan rest), 150° F (beta amylase rest) and 170° F (alpha amylase rest). The gelatinization temperature is lower than barley so it can be mixed into the mash directly. Contributes less color than wheat malt and increases foam and head retention. Lovibond: 2.
