Bottom fermenting brewer’s yeast originating from Berlin in Germany. SafLager S-23 recommended for the production of fruitier and more estery lagers. Its profile gives beers with a good
length on the palate. The strain is used by Western European commercial Breweries and has been reported to produce lagers with some fruity and esters notes.

Sedimentation: high. Final gravity: medium. Temperature range: 11C - 24C (51F - 75F), ideally ( 11C - 15C (51F - 59F).
